SUPPER: PART DOS

Remember a couple weeks back I told you S made dinner. My ninos love sushi, soup dumplings, and chicken fingers. So, when it comes to dinner time they are opinionated and willing to help. When I realized how keen S was when it comes to preparing a meal, I jumped on that. I taught her to crack eggs, measure, and season. Now, I feel pretty confident she can put together a few small meals on her own that we all love. Tell me who doesn't like chicken tenders?


I do have to say our version of chicken nuggets are on the healthy side, but that is not to say they aren't delicioso. 
STEP UNO:
I purchase my tenders from Trader Joe's, and yes they are organic. Injected hormones scare me, so I try and avoid them. Also, Trader Joe's has a great price point of a variety of organic products.


STEP DOS:

Crack two large organic eggs into an empty bowl. In a separate bowl add half a bag of bread crumbs (I like the Trade Joe's bread crumbs), then season the bread to taste. I add lemon zest, sea salt, and a few glugs of olive oil. 



STEP TRES:

Dip baby dip!!! Take your tenders dip them in the egg yolk, then the bread crumbs, and place your breaded tender in a baking dish. I preheat the over and 425. When all the tenders are breaded just pop them in the oven for 30 minutes. Flip them over at the 15 minute mark. 





After 30+ minutes your tenders are complete. If you like them extra crispy leave them in the oven longer and coat the bottom of your baking dish with olive oil.
