With Cinco de Mayo just around the corner I thought I would be remiss if I didn't share any of my a favorite Mexican recipes. I know around here we will be breaking out our Frida Kahlo and paper flowers. I will use any excuse to celebrate!!!
Here is my 411 on Tortillas!!!
I promise you can do it. I taught Sophia's four year old class, and they were champs!
UNO: INGREDIENTS
All you need is flour, baking powder, salt, manteca (animal lard preferred), and warm water.

MIX TOGETHER
3.5 cups of Flour
1tsp Salt
1/2 tsp of Baking Powder
1/2 cup of Manteca (sounds better then lard)
Cover your bowl of dough with a warm wet towel, then begin to roll out your tortillas.
I cook all my tortillas on a COMAL (iron skillet). Cook 5 seconds on each side. You will be ready in about an hour with three dozen tortillas. Add your favorite taco filling and your guests will be sure to be more than pleased to be celebrating CINCO de MAYO.

Your tortillas are amazing, Mel! I've got to use your recipe again soon, because homemade ones really are the best. You can use Crisco, too, if you can't find manteca, right? xo
