Happy Cinco De Mayo!!
Today I want to share my home-made enchilada sauce. It is so easy to make, and your guests will be begging for your recipe!
NOW FOR THE GOOD STUFF
Handful of Cilantro
Bring a pot of water to boil, then toss in your dried chillies for 15 minutos.
In a blender toss in your cooked chillies, half the boiled water, salt, garlic, cilantro, and stewed tomatoes. Depending on the heat you want to bring will determine how many chillies you use (I used 6).
Blend all your ingredients together and, voila, you have home-made enchilada sauce. We are making chicken enchiladas tonight for a Cinco De Mayo work party.
